

The Maid-Rite
One of our
favorite spots for a delicious meal was the Maid-Rite, located at
5815 Calumet Avenue in Hammond.
Everyone has their own story about how they liked to order their
Maid-Rite. You could order it with with
M and P (mustard and paper-thin pickles) and before you knew it,
the loose meat taste-treat sat in front of you.
When you walked in, the aroma would start you salivating and this
Pavlovian classical conditioning would continue
throughout the meal!
Milk shakes and
malted milks were concocted and blended to your specifications.
Add the french-fries,
and life was complete!
Although our Maid-Rite restaurant in Hammond has long since closed, you can prepare your own Maid-Rite meal in the privacy of your own home. This recipe will bring back wonderful memories of Maid-Rite hamburgers... just remember to steam the buns!
MAID-RITE STYLE LOOSE MEAT SANDWICHES
1-1/2 to 2
pounds ground beef
1 medium onion, chopped
1 can chicken broth
Salt and pepper to taste
Crumble beef in
skillet and brown over medium to medium-low heat;
add onion and cook until onion begins to turn clear. Drain off
fat.
Meat should be very crumbly. Add broth and cook down until juice
is almost gone.
Salt and pepper to taste.
